In the Kitchen with Gram...Golden Nuggets (Carrot Cake Bars)!

This incredible recipe hails from my aunt Barb (well, technically, "ex-aunt", but whatev...once family, ALWAYS family!).


I'll be honest here...I've never, ever (ever, ever, ever) made carrot cake, carrot bars, carrot cookies (do they make those?) because it always seemed so daunting. Well, other than choppin' up carrots, I discovered that it is super fast and incredibly easy!

My kinda recipe.

First up, the line up:


First, flour and sugar:


Beat your eggs a bit, then add those in too.


Add in the oil and the rest of the seasonings,


And give it a good stir.


When its all combined, add in the nuts and grated/chopped carrots and combine.


Prep your favorite 9x13 baking dish in your favorite way...Crisco spray it is at Gram's! 


Pour the batter into the pan, spread evenly and toss it into the oven to bake!

While it's baking, get ready to make the glorious, heavenly, sinful, to die for icing.


Beat the softened cream cheese a bit,


Add in the butter,


And the vanilla, and mix some more, making the cream cheese nice and fluffy.


Next up, the powdered sugar...


And Gram's secret weapon...salt.


Then mix that frosting until it is fluffy and well combined!


Corral a taste tester and force her to lick a beater.


After the bars have completely cooled, it's time to frost!!


And, if your heart so desires, create a lovely swooshy pattern in the frosting. Also, if you'd like, you can top the frosting with crushed nuts...we didn't because there are plenty of nuts in the bars!


And, voila. Behold...the Golden Nugget!!!


Gram's Golden Nugget Bars (Carrot Cake Bars)
Printable Recipe

Bars:
1 c flour
1 c sugar
2 eggs, lightly beaten
1/2 c oil
1 tsp soda
1 tsp salt
1 tsp cinnamon
1/2 c chopped pecans
1 1/2 c shredded carrots

Preheat oven to 350*F, grease 9x13 baking pan. Combine all ingredients, stir well. Pour into baking pan and bake 25-30 minutes. Allow to cool completely before frosting.

Cream Cheese Frosting:
1 8oz brick cream cheese, softened
1 T butter, softened
1 tsp vanilla
2 cups powdered sugar
Dash of salt
1/2 c chopped pecans (optional)

Beat softened cream cheese until slightly fluffy, add in butter and vanilla, beat until combined. Add in powdered sugar and salt and beat until fluffy. Frost cooled bars, topping with pecans as desired.
